Spain’s Palacios links up with US “hen-less egg” producer The Every Co.

Grupo Palacios, the Spain-based food group associated with chorizo and Spanish omelette, is to use a “hen-less egg” in some of its products.

The Madrid-based manufacturer, which has a product range that also includes fresh tortillas and frozen pastries, said it has struck a commercial agreement to use the egg alternative developed by US business The Every Co.

Palacios, which already has plant-based products, plans to incorporate the Every Egg product into its flagship Spanish omelette products and into the research and development of new products.

So far, Every Egg has been mainly targeted at the high-end foodservice sector in the US.

Palacios – which began life in the 1960s as a local butcher’s shop in Albelda de Iregua, La Rioja – said in its statement: “We were genuinely amazed by the delicious taste and culinary versatility of Every Egg. Its ability to seamlessly blend into a wide range of dishes while maintaining the authentic taste and texture of a high-quality hen egg is remarkable.”

The Every Co. was set up in 2014 as Clara Foods and changed its name in 2021. Its backers have included Brazil-based meat group Minerva, Mexican bakery giant Grupo Bimbo, brewer Anheuser-Busch InBev and Hollywood actress Anne Hathaway.

Palacios, which generated a turnover of more than €380m ($407.4m) in 2023, has 11 production plants in Spain, one in the UK and another in the US. Its products are distributed in more than 50 countries and it employs more than 1,000 people.

In 2019, local investor MCH Private Equity and France’s Ardian Co-Investment acquired a majority stake in the business for an undisclosed sum.
