Food specialists in India are promoting mustard-based oil as the latest healthy food choice, claiming its properties fight disease and prevent health problems arising.


“Mustard as an edible oil is superior to other cooking medium because it has the lowest saturated fat content and a balanced ratio of polyunsaturated fats,” H.B.Singh, director of India’s Mustard Research and Promotion Consortium, has said.


Meanwhile, the country’s National Institution of Immunology, Hyderabad, found that in a comparative study of all cooking oils, rapeseed mustard oil aided the normal functioning of kidneys, livers and hearts. Singh claims that other studies have shown that regions traditionally using saturated fats such as coconut oil or animal fats have high cholesterol levels compared to areas where rapeseed-mustard oil is used.
