The Canadian province of Ontario is relenting on regulations banning the use of fresh raw fish for sushi.


The controversial regulation, which required fish to be deep frozen to kill potential parasites and then thawed, will be overturned after the province’s chief health officer declared that sushi and sashimi served in restaurants and large grocery stores is safe to eat.


The rule outraged restaurant owners earlier this year, who complained that it would ruin the food’s taste and texture. The government had spent months reviewing the rule without consulting sushi restaurants, but a health ministry memo acknowledged that while deep freezing kills parasites that can cause disease, cases of sick consumers are few and most sushi fish is already frozen, often at sea.
