When Patricia Forbes happened upon an old family recipe, little could she have known that she had also stumbled upon a modern day revolution in the world of ethnic food.
Forbes shared the find with neighbour and friend Charlotte Hart, and Bombay Bangers was born. The Buckinghamshire-based twosome set about developing and marketing an entirely new range of sausages that represented the best in fusion cooking; the tastes of India with the well-loved format of British cuisine.
Hart revealed however that the recipe does not simply involve adding spice to sausages; the products are created with a distinct era of history in mind. During the days of the Raj, when the British ruled India, servants were often asked to prepare traditional British fodder for the homesick aristocracy. A lack of traditional ingredients however meant that Indian chefs had to compromise and substitute ethnic alternatives.
Bombay Bangers, explained Hart, are a prime example of this. Delicately spiced sausages made with chicken, pork, beef or lamb (there is also a vegetable option to cater for meat-free diets) they are a gourmet product. They are also microwaveable and tasty fastfood, designed for the food-to-go market but generating much interest from publicans anxious to prevent clientele leaving for a curry mid evening.
The creation of the Bombay Banger led to a wider range of gourmet products. The “Quick Curry Fix” product was a foodservice provider’s dream: a handheld microwaveable snack for the curry addict”. Consisting of a Bombay banger and chutney in a soft bread wrap, the product is unusual, convenient and tasty.

“This could be the new cult food,” said Hart: “Much bigger than the cheeseburger.”
